A cake decorating blog for those of us who can't imagine doing this for a job, but love the idea of using a cake and some icing as a canvas to create something special for the people who matter to us. Besides, if this were my job, someone might think I should learn to get my buttercream perfectly smooth!

Some of my favourite cake baking and decorating recipes or products
Cakes or Cupcakes
White Chocolate Grand Marnier Cake
Karen's Coconut Cupcakes
Cream throughly (2-3 minutes)
1 c butter/margarine
1 c sugar
4 eggs
Add in and mix thoroughly
2 c all-purpose flour
2 1/2 tsp baking powder
1 tsp coconut extract
Blend in
1/2 c dessicated, unsweetened coconut
Bake at 350 F for 20 min.
Makes 18 cupcakes.
Frostings and Fondant
Wilton's Buttercream Icing - I'm a fan of this recipe. I like the consistency to work with and the taste always gets rave reviews. I've also used Almond or Coconut flavouring instead of the clear Vanilla.
Marshmallow Fondant - Tastes way better than most purchased fondant icing and is WAY less expensive! ... oh, and it's a lot of fun to make as long as you don't mind getting a bit messy. You do have to plan ahead because the fondant texture is much better if it has a chance to sit overnight before you need to use it. If I don't have time to make it, the Duff Goldman fondant is really good, especially if you have a Michael's coupon handy.
